Over the 4th, Marion & I partnered on this delicious surf n’ turf meal for the whole family. Marion’s dad had purchased restaurant-grade filets and I had some frozen Gulf shrimp in the freezer that I needed to use up. Not enough shrimp to serve as an entree, about a pound of gorgeous large shrimp. What on earth was I going to do wit it?No time for remoulade, and I didn’t have the ingredients anyway. So, I threw together a citrusy marinade for the shrimp and threaded them on some wooden skewers that had been laying around for about a decade (I’d never used wooden skewers before, but Marion uses them all the time).

Jalapeno Lime Shrimp Skewers

Ingredients
  • 1 lb shrimp, unpeeled with heads on
  • juice of one fresh lime
  • 1 jalapeño, minced
  • 2 cloves garlic, crushed
  • 2 Tbsp. minced green onion
  • 2 Tbsp. minced cilantro
  • 1 Tbsp. apple cider vinegar
  • 1/3 cup avocado or extra virgin olive oil.
  • Pinch cayenne pepper
  • Kosher salt and pepper to taste
Directions
  • Step 1 De-head the shrimp and peel, leaving the tails intact.
  • Step 2 Devein the top of the shrimp.
  • Step 3 Pat with paper towels to dry shrimp as much as possible. Toss them in the marinade and refrigerate for about 30 minutes to an hour.
  • Step 4 Take out the shrimp and thread them on to wooden skewers that have been soaked in water for 15 minutes.
  • Step 5 Skewer the shrimp in two places so they form a “C” with the tail at the bottom (or top). Grill for 4-5 minutes aside or until Shrimp are pink. Baste with the green onion butter sauce while grilling to keep skewers from getting dry.

In a burst of inspiration, Marion whipped up a butter & green onion sauce to baste the shrimp & filets while on the grill and the result was one of the best dinners we’ve ever created. The shrimp grilled up quick, crisp and succulent, and worked as a perfect side for the steaks. The lime/garlic marinade brought out the delicate flavor of the shrimp and balanced the richness of the meat. We’ll be making these two together again!

Grilled Filets with Green Onion Butter Sauce

Ingredients
  • 4 good quality filets
  • 3 tbsp. butter
  • 2 green onions, diced
  • 1 garlic clove, minced
  • Salt & Pepper to taste
Directions
  • Step 1 Pat the filets down with paper towels, absorbing all liquids.
  • Step 2 Season both sides generously with salt and peper.
  • Step 3 Heat the butter in a small saucepan over medium heat
  • Step 4 Add in diced green onions & garlic and continue to simmer for 3-4 minutes.
  • Step 5 Add filets to grill over medium-high heat.
  • Step 6 Baste filets with green onion butter sauce, then close grill.
  • Step 7 Flip the filets at 7 minutes and baste with sauce again.
  • Step 8 Remove after another 7 minutes for a medium-rare finish.
  • Step 9 Top with sauce and serve.
