Toasted Oat Pecan Granola with Cranberries

For years, I tried to eat granola but always found it too much like eating candy for breakfast. I tried dozens of brands, from grocery store chain brands to expensive on-line heritage kinds. And every single one was too sweet. Way too sweet. I never thought of making my own until I ran across an article by Molly Wizenberg in Cooking Life who had the same issue with granola as I do and came up with her own recipe. Using that one as a base, I created a granola that allows the nutty pecans and oats to shine through clean and bright with just a touch of honey and brown sugar to add a hint of sweetness.

This recipe will make enough to get you through about 5-6 breakfasts, and it’s easily doubled. Just make sure you watch the mixture carefully towards the end of the baking period. If you blink your eyes, it’ll get too brown. But you may like it that way!

Tips for making granola

  • Experiment with the timing in the oven — some like it more toasted than others. Try 30 minutes for a still golden but less toasted taste.
  • It’s no secret that seeds are all the rage now. Add a quarter cup of pumpkin seeds and another of flaxseeds to the mixture before you put this in the oven. Double your nutritional value!

Ingredients
  • 3 cups old fashioned oats
  • 1/2 cup cup unsweetened shredded coconut
  • 1 cup chopped pecans
  • 1/2 slivered almonds/ 2-3 tbsp. Packed brown sugar
  • 3/4 tsp. Ground cinnamon
  • 1/2 tsp. Ground ginger
  • 1/4 tsp. Salt
  • 1/3 cup honey
  • 2 tbsp. Oil
  • 1 cup assorted dried fruit (I use cranberries or cherries)
Directions
  • Step 1 Preheat oven to 300 degrees.
  • Step 2 Line rimmed baking sheet with parchment.
  • Step 3 Mix first 7 ingredients in a large bowl. Stir honey and oil in a saucepan over medium heat until smooth.
  • Step 4 Pour honey mixture over oat mixture
  • Step 5 toss.
  • Step 6 Spread on prepared sheet.
  • Step 7 Bake until golden, stirring every 10 minutes, for about 40 minutes.
  • Step 8 Remove from oven. Stir and let cool.
  • Step 9 Mix in dried fruit.
  • Step 10 Store in an airtight container.
