Parmesan-Sage Crisps

Where have these crisps been all my life?? Easy as 1-2-3, these Parmesan-Sage Crisps are gorgeous – delicate, light as air, melt-in-your mouth delicious! Best of all, from a block of good parmesan to serving plate, they take about 15 minutes to throw together. Serve them with some olives or caponata as an appetizer – they’re cheese and crackers all in one! Or you can serve them with soups or crumble them up as a topping on salads and tacos.

Fresh herbs are best

Fresh Herbs are best for these Parmesan-Sage Crisps . You’ve probably seen parmesan crisps at Whole Foods and maybe even purchased them. Home-made crisps are so much better– lighter, crisper, and tastier with tiny bits of fresh herbs. You can use any fresh herb you like best, or any mix. I love sage. Rosemary, basil, and thyme are also good. I like just a hint of lemon to brighten the taste, but you can omit if you want.

Opt for High quality Parmesan

Grate a high-quality Parmigiano-Reggiano cheese. Since parmesan cheese is virtually the only ingredient, please use a high-quality cheese! I first grated these on a fine grater setting, and they came out paper thin! For the perfect texture, I found a medium grate to be best. Play around and find the texture you prefer.

Watch these carefully in the oven, they cook fast! Mix the herbs with the cheese, add fresh ground pepper. Place heaping tablespoons on a parchment paper-lined baking sheet and pop in the oven. That’s it! 

Final tip for Parmesan-Sage Crisps: You can easily double or triple this recipe, you’ll just need 2 baking sheets.

Parmesan Sage Crisps

  • 3 oz. freshly grated Parmigiano-Reggiano (about 1 cup)
  • 1 tbsp. minced fresh sage
  • ¼ tsp. grated lemon peel to taste (optional)
  • Freshly ground black pepper
  • Step 1 Pre-heat oven to 400 degrees.
  • Step 2 Line a baking sheet with parchment paper.
  • Step 3 Using a medium grater, grate the cheese and place in a small bowl. Add the sage, lemon, and pepper and stir to mix with a fork.
  • Step 4 Place heaping tablespoons on the parchment paper. Level gently with your fingers into a flattish-circular shape, but don’t flatten completely, the cheese will melt.
  • Step 5 Place in hot oven for about 3 minutes or until a golden color.
  • Step 6 Let them cool about 10 minutes, then gently remove, peeling away the parchment paper.
