Citrus Salad with Honey-Lime Vinaigrette

Chase away the winter blahs – perk up your mood, your taste buds, and your health with this gorgeous, tangy-sweet Citrus Salad with Honey-Lime Vinaigrette.

Use your imagination and whatever is available.

Winter is the time for fresh-picked citrus fruits of all kinds: blood oranges, cara cara oranges, navel oranges, kumquats, ruby grapefruit, kiwi, pomelo oranges and tangerines.  Let the artist in you go to town! Pick out your favorite fresh fruits, peel and slice them, then arrange on your prettiest platter. Tuck slices of ripe avocado in the nooks and crannies, and layer thinly sliced red onion or shallot on top. Add a few splashes of a golden honey-lime vinaigrette and you’ve got yourself a medley of jewels on a platter and the prettiest arrangement you’ll ever see!

Extra add-ons for even more taste!

If you’re in the mood for something more substantial, you can add toasted sliced almonds or chopped walnuts. Some crumbled goat cheese would also be delicious. And Vicky often serves this over a bed of bright green arugula!

Citrus Salad with Honey-Lime Vinaigrette

  • 1 ruby grapefruit
  • 2 cara cara or tangerines
  • 1 navel orange
  • 2 kiwis
  • Flaky sea salt (like Maldon’s)
  • ¼ red onion, thinly sliced or one shallot
  • 3 tbsp. extra virgin olive oil
  • 2 tsp. apple cider vinegar
  • ½ tsp. honey
  • Juice of one small lime
  • Step 1 Peel and slice the citrus, making sure to get off as much of the thick pith as possible.
  • Step 2 Slice the fruit horizontally into ¼ inch circular slices. Layer on a pretty platter.
  • Step 3 Slice the red onion quarter into thin slices and cover with vinegar or water in a small bowl. Let stand for 15 minutes.
  • Step 4 Peel the avocado and slice into thin slices. Arrange on the platter with the citrus.
  • Step 5 Sprinkle the red onion over the salad.
  • Step 6 Mix the honey, vinegar, and lime juice. Whisk in the olive oil. Dress the salad and serve.
