Rolled oats, almond milk and a hint of brown sugar form a tasty filling topped by crunchy almonds and more oats. Fresh berries add extra shots of color, nutrition, and flavor. Breakfast never had it so good, you can eat this hot or cold, on its own or with a dollop of yogurt. Stores well in the refrigerator for days so it’ll be ready whenever you are. This one’s a keeper.

Tips for making berry healthy oatmeal bake

  • This recipe uses very little sugar as I’m not a fan of super-sweet food. You can always add some honey or maple sugar to the finished dish if you like. Or you can up the brown sugar in the recipe, it’s entirely up to you. But I urge you to try it this way first.
  • You can use frozen berries, just make sure to thaw them first.
  • Store in an airtight container or in a glass dish covered with plastic wrap. It’ll last for days. I ate a piece this morning that had been in the fridge for 4 days and it was as good, maybe even better, than the first day.

  • For oatmeal bake
  • 1 1/4 cups old-fashioned rolled oats
  • 1 tbsp. light brown sugar
  • pinch of kosher salt
  • 1 tbsp. chia or flax seeds (optional)
  • 1 2/3 cup almond milk
  • 1 large egg
  • 1 1/2 tsp. pure vanilla extract
  • For topping
  • 1/3 cup sliced almonds
  • 1/3 cup old-fashioned rolled oats
  • 2 tbsp. light brown sugar
  • 2 tbsp. unsalted butter, melted
  • 1 tbsp. unbleached all purpose flour
  • 1/4 tsp. ground cinnamon
  • 2 tbsp. unsweetened coconut flakes (optional)
  • 2 cups fresh berries (pitted cherries, blueberries, raspberries, blackberries)
  • Step 1 Pre-heat oven to 350 degrees.
  • Step 2 Spray oil on a 2 quart or 8 inch square baking dish.
  • Step 3 In a large mixing bowl, mix oats, sugar, salt and seeds.
  • Step 4 In another bowl, whisk milk, egg, and vanilla extract.
  • Step 5 Pour liquid mixture into oats mixture and blend well.
  • Step 6 Pour the mixture evenly into the greased baking dish.
  • Step 7 Place the berries on top of the oatmeal mixture.
  • Step 8 Mix together the topping ingredients and sprinkle over the berries.
  • Step 9 Bake until golden brown or about 50 minutes.
  • Step 10 Cool for about 15 minutes before eating.
